Since we have been snowed in this week, I have been going to town with my new crockpot! And doing lots of baking too of course!! I decided that I really need some quick healthy meals since every week is so busy. So what I’ve been doing is meal planning for each week (which actually drives me crazy, but it helps), so I wanted to share my tips with you!

I am taking a look at what foods & ingredients I have around my apartment already & trying to make recipes based on that. Like this week I had some black beans & peppers & quinoa, so I whipped up a black bean soup (see below). Then I am planning out all my meals & snacks for each day of the week; writing it out in a planner. I am picking 3 recipes to make for each week & making sure I have other foods on hand that can make quick healthy meals. Think frozen fish, frozen veggies, egg whites, & Shakeology of course!

This recipe I found on Pinterest & then just added the quinoa & avocado to the top myself.

Black Bean Quinoa Soup

  • 1 tbsp olive oil
  • 1 bag fire roasted peppers & onions (Trader Joe’s) or you can use fresh
  • 4 garlic cloves
  • 1 can black beans
  • 7 cups water
  • 2 tbsp fresh lime juice
  • 2 tsp sea salt
  • 1/4 tsp ground black pepper

Cook the peppers & onions in olive oil in a pan. Add the other ingredients & these to crockpot. Cook on high for about 3 hours.

Black Bean Brownies

So I may be on a bit of a baking spree this past week, but what can I say? Cooking healthy treats helps me to not binge or eat unhealthy foods. My buddy Jerad made these amazing black bean brownies & I saw them on his Instagram so one morning I totally got up & made black bean brownies at 9AM haha. They were AMAZE!

Here is the recipe:

  • 1 can black beans
  • 1/2 cup oatmeal (I use TJ’s Gluten Free)
  • 1/4 cup honey
  • 1/4 cup Stevia
  • 3 tbsp unsweetened cocoa
  • 1 tspn baking powder
  • 2 whole eggs
  • 1 scoop Chocolate Shakeology (or whatever protein powder)
  • 4 tbsp chocolate chips (3 mixed in batter; 1 sprinkled on top)

Mix all together in a blender well. Bake at 350 for about 20 minutes. This makes about 16 muffins; they were around 100 calories a piece.

See ya’ll healthy eating can be delicious & simple! Don’t let your sweet tooth make you go running for all those processed, super sugary treats. It’s a lifestyle change, not a diet.

Is it just me or did 2013 & the holidays fly by? I cannot believe it’s already January! I saw a cool quote on Instagram last night, “the bodies we make in the winter are what we will look like in the summer.” So that inspired me to make a post today about what we can do now to work on our weight loss solutions for the new year and make them last throughout the entire year icon smile Weight Loss Solutions for the New Year

Here are a few steps that you can take to make this a lasting change for your weight loss solutions for the new year:

  1. Make peace with your trigger foods. Figure out what foods you crave & come to terms with it. But DO NOT deprive it from your diet completely. That leads to binging (believe me I know). So allow yourself to have them once or twice a week.
  2. Rejoice in the benefits of healthy eating. Instead of thinking how deprived you’re going to be, think about how it’s going to benefit your health & how much longer you’re going to live.
  3. Set a goal. Make a goal that is SMART – specific, measurable, attainable, realistic, & trackable. Focus on the changes you can make to get towards losing however many pounds you set as your goal.
  4. Start working out at home. It saves on gym fees & it’s SO MUCH easier! You don’t have to hassle with the traffic & the drive either. Grab a friend to do it with you!
  5. Make some basic changes. Don’t make all the changes to your lifestyle at once, do one at a time. If you aren’t willing to change your lifestyle, you won’t be successful with weight loss.
  6. Have a friend hold you accountable. You are more likely to do something when you have committed to someone else to show up or that you’re going to do it.

Apply these changes to your weight loss solutions for the new year and I promise you will have victory!
